Eggs, and how to love them.

I have a friend who was a short order cook. He can crack four eggs at a time and place them in a bowl or pan with no spills or mess.

I have never tried the pan flip with eggs, but I do it with pancakes sometimes.

I can, or at least could 18 years ago, start a run of 12 regs (10/1 burgers), toast the buns, lay the patties on the grill, dress all 12 burgers (mustard, ketchup, onion, pickle, cheese on 12---in that order), pull the patties two at a time, then pull the heels from the toaster, flip the entire tray of toasted heels onto the tray of fully-dressed 10/1 regs, in under 60 seconds. Flipping a fried egg in a pan ain't no thing. I'm cooking for family. Popularity by populating.Originally posted by Jeff Lebowski View PostWuap, that's OK that you are too uncoordinated to execute a simple pan flip. You are right. Fish/egg spatulas are multi-taskers. The shape makes it ideal for flipping flipping anything. http://www.amazon.com/Messermeister-...ds=egg+spatulaOriginally posted by TripletDaddy View PostAlso that looks like it is intended for fish.

If you're cooking for a lot of people, as I usually am, go with one of these. I can do the pan flip, no problem at all, but why drive the wagon close to the edge when the center of the road is safe and wide?

I can do the one handed crack.
The pan flip, however...
I use a spatula.

But did you crack the eggs only using one hand?Originally posted by Jeff Lebowski View PostDid a two-egg omelet this morning with green chiles and cheese and topped with sour cream. Sour cream is a wonderful add-on for eggs.
And I successfully completed the pan flip.

I do 3 eggs as well, but I only include one yolk. I also put some ground flax seed on it and cut up an avocado with it.Originally posted by TripletDaddy View PostThis is what I was getting into this morning for brek:
