    Pretty much how I do scrambled eggs, but I'm not as into runny eggs as him (or the rest of you people).

    I have made 2 over easy eggs every morning as well since this thread. I always add a slice of cheese. I have actually even used hamburger buns (Ran out of bread), and it was pretty good. Soaked up the runny yoke perfectly.

    I have even make these for a late night snack as well.

    sounds great. Do you think I could substitute non fat canned milk for the cream, and water for the milk? And could I use low salt vegetable bouillon instead of the chicken? Could I omit the salt, and use non fat cottage cheese instead of regular cheese? And egg beaters instead of the egg?

    I'll try it and report back.

    As part of my weight loss regime (65 pounds now) often at night I have an egg concoction to take the edge off.     I have felt a little guilty about eating four eggs at a time when I have them a couple of times a week, even though my cholesterol and other relevant indicia are fine. But then I read that Teddy Roosevelt routinely ate a dozen eggs for breakfast. Bully!
