We we're visiting my wife's sister in South Texas. After a long day of traveling around nobody was interested in sitting in a restaurant with tired kids waiting for dinner. 2C all-purpose flour
4t sugar
1t kosher salt
1t baking powder
1/2t baking soda
2C buttermilk
4T melted butter
2 eggs
vanilla (I pour it out of the bottle a second, probably around 1T)
Blueberries (I use fresh, but you could use frozen)
Mix the dry ingredients together. Melt the butter (slowly, so it doesn't separate or get too hot) and add to the eggs, then mix in the buttermilk and vanilla. The egg yolks help to incorporate the butter and milk so they don't separate.
Mix the liquid into the dry ingredients with several whisks - leaving a few lumps is fine.
Cook over medium heat. I use a cast iron skillet lubricated with butter. Add the blueberries and then flip over after about 4 minutes, cooking for an additional minute or so. Serve with maple syrup and bacon.

My favorite breakfasts growing up were the sourdough flapjacks my granddad made. He had a start that was probably going on 30 or 40 years old by that point, kept from his younger days, and it was magnificent. With chokecherry syrup they were great.
I experimented with a start myself and it wasn't bad, but not as good as his (the start was made naturally by leaving flour and water out on my counter).Awesomeness now has a name. Let me introduce myself.

Can't even remember, which probably isn't a great sign because I remember just about everything else I ate on that trip and still dream of the cochinita pibil torta I had at Xoco. We went with some friends that were really hyping the place, and it's not like it was bad, we just didn't think it was great. I remember thinking the menu had a lot of sweet stuff (chocolate, caramel, sugary stuff) and I'm not as into sweet breakfast foods. my favorite thing on their brunch is the blt eggs benedict but I am also a fan of sweet breakfast since I have it so rarely and they have some very fun combinations. Baking bacon in the oven instead of frying it up, you will thank me later. The fat get perfectly and uniformly rendered. Put it in the oven when you are cooking whatever else you are planning on having with breakfast.

For me, there are pros and cons. I like that my place doesn't smell like bacon for the entire day when I cook them in the oven.
