My favorite breakfast....I will never eat it again.
It was the early bird special at Jedidiah's in Jackson, WY.
Eggs, bacon and sourjacks.
Jed's is gone. Like so many of the places from my childhood that warmly haunt the memories of my heart.
I've never had sourjacks that I enjoy as much as the ones I had there. Although, I do have fond memories of the sourdough pancakes served at the Edward Partrige Memorial Breakfast in lovely Oak City, Utah.
There was something in the way they cooked them at Jedediah's. The edges were browned and crispy and the rest of the pancake was laced with crispy, dark veins of goodness on the outside....the inside was slightly chewy but tender and, yet, still fluffy.
I've had sourdough pancakes many places, and they just aren't the same. Even when I've tried to replicate them myself. While good, they never measure up.
Sometimes we'd drive to Jackson just so I could get a humble breakfast in that tiny little cabin-turned-pancake-paradise. We'd often divert our travel through town.

I do this to my wife as well. I don't care all that much about the contents, I really only care about what it tastes like. But the Mrs. won't like something just because of what it is. There's a bakery by our house that makes this lemon cheesecake made with chevre. I bought it once and had the Mrs. try. First bite and she thinks it's really good, but when she asks me what it is and I say goat cheese she flips and won't take another bite because she doesn't like goat cheese. Also, we were served "black pudding" at Le Chateaubriand in Paris, and I of course know that it's blood sausage but the Mrs. asks I tell her I have no idea what it is.
