    I was talking to someone once who told me they keep a jar of bacon grease in the fridge in a canning jar - just saving what they get from cooking it each time. It seems like I recall someone here talking about keeping bacon grease too, but I might not be remembering correctly.

    I like the flavor it brings to cooking certain things, but not enough to keep a jar of it yet...

      Yeah, for me it's the fat AND the bacon-y bits left behind that I like mixed into the eggs. I have a jar in the freezer, but it contains bacon, ground beef, and miscellaneous grease that I never plan to use again.

        I keep a jar of rendered bacon fat in the fridge. I use it occasionally. I have seasoned my cast iron with bacon grease as well.

          Apparently there's more of you out there than I knew.

          There are some recipes that specifically call for bacon grease and I've thought about collecting it, but never went to the trouble.

          I've also cooked bacon in my dutch ovens to season them some. Just seemed like a natural way to get oil into the pores of the cast iron.

          I may have to think on this a little more - and get some more bacon in the mean time just in case I decide I need to cook it up and save the grease...

            how do you folks make beans without bacon grease or lard?

                            We had breakfast for dinner tonight. We had a bunch of toppings for everyone to choose from and then I made omelets for everyone. Diced mushrooms, red and yellow peppers, onions, spinach, crumbled bacon, ground sausage, tomatoes, and cheese. Then we had link sausage, potatoes O'Brien, biscuits, and pancakes.

                            BTW, the secret to a nice, fluffy omelet that won't break apart on you is to add pancake batter to your eggs. I make a mean breakfast.

                            Also, FN Phat you need Chachi to post her french toast recipe.
