          • My shipment from Cowtown arrived this morning. Looking forward to doing Ribs, Moinks and ABTs for the game tomorrow.

If you haven't tried the sauce, do. It is awesome.

Less talk, more rub. I've tried that line before, mixed results.

Let me know how you like the rub.

One of the things I like about Cowtown sauce is that it is reasonably priced. $3.99 per bottle as opposed to the ridiculous prices some places (Traeger, I am looking your way) charge for sauces.

True that. Treager is getting like $7 for a smaller bottle, but I do love me some apricot.

                  • I went to BBQ on the River on Thursday and had the best ribs I have had in a long time. They were cooked to perfection and had a very mild smoke flavor to them. I went with the half rack so I could try another place out...I should have stuck with J-Mack's and got the full rack. I went to another place that is out of Memphis but did not care for the ribs at all. Very, very strong smoke flavor. We were trying to get some from the reigning Grand Champion "Cookies" but the line was ridiculous. My wife just called and informed me that she got a babysitter and we are going back tonight.

                    • I cooked up a bunch of baby back ribs today. I put the Memphis Dust rub on all of them for the smoke phase and used JL's 1.5-2-1 method. I used the Perfect Mix pellets on the Traeger. After the foil phase, I used 3 different sauces so we could have a taste test and see what we liked. I tried KC Masterpiece (which we've used a lot in the past for 'boneless ribs' in the slow cooker), Trader Joe's All Natural, and Sweet Baby Ray's, that I saw at Costco and bought when I got the ribs.

I was pretty surprised with the results. Even though we've used and liked KC Masterpiece a lot in the past, for this particular combination of meat, rub, and pellets, that one came in third on all accounts. Sweet Baby Ray's was the overall winner, with Trader Joe's a close second.

Here are the ribs with little flags in them to help identify which is which. (Yeah, we had a lot left over. The kids were so disappointed to have to take home some leftovers. )

And here are the candidates, clockwise from the top: Sweet Baby Ray's, KC, and Trader Joe's. I would have liked them cooked a little longer, but the kids all said they liked them just fine; they tend to like things a little rarer than I do these days.

                      • nice smoke ring mtnbiker. looks great!

I also did ribs today, as well as chicken.

                        John Henry Sugar Maple/KC Masterpiece
Famous Dave's Rib Rub/Sweet Baby Rays (all gluten free!)
Spade L Pork Rub/Raspberry Chipotle sauce

and a new entry into the rub family....

Old World Fire Roasted Chipotle Rub/Famous Dave's Sweet and Zesty.

I was at Casual BBQ picking up some John Henry and the guy recommended Old World. It tasted great. Has a very slight kick but the flavor is nice. If you are in the market for a new spice, check this one out. It allegedly works on chicken and beef, as well. not sure if I would want it on beef, though.

Also, Casual just landed a pretty nice shipment of all sorts of John Henry...pecan, cilantro lime, garlic something or other, sugar maple, a several others. They have a decent little selection of rubs. If you are passing by 39S, stop by and check it out.

                          We did ribs today too.

                          • Looks great. I did ribs today also. I've gone back to straight and dry the last few times. They've turned out great.

                            • That's hilarious how many of us did ribs today. Kind of like the Spirit working to get all the conference eats correlated, right?

                              • I, as well, did ribs yesterday. 2 racks were blessed with JL's rub and the third was hit with Spade L Pork rub (thanks Fusnik!). One rack of the JL's and the Spade L was coated in Corky's. The other rack of JL's had Sweet Baby Ray's (my MIL does not like even a hint of spice). I started at 9am so that we were able to enjoy a late lunch/early dinner due to family photos later in the day. All was well in the Phat Family dining room.
