It's 11pm here, there are no all-beef franks in this country, we can't grill in our apt veranda (city ordinance) and I only get the NFL channel feed on ESPN HD here. At least I get to see the stage set up for Madonna. Maybe she'll have a wardrobe malfunction?

Picked up these beautiful new york strip steaks at Costco. Labeled as Choice, but they look Prime to me.
I always like to do grilled onions with our steak. We bought a bag of Chilean Sweets. I peel them and slice them into thirds and coat with a liberal amount of olive oil and sprinkle with an herb mix:
I cook them on this HUGE grilling basket that I bought. It is perfect because I can turn them all over by simply rotating the thing. It is a real PITA without one of these things because the onion slices fall apart when you turn them over otherwise.
Some close-ups. They taste as good as they look.
Finally, a couple of shots of the steaks. Cooked to a perfect medium with my thermapen (thanks, DT). They were fabulous.

It was fantastic. I was a bit nervous given the learning curve with a new smoker but I couldn't be happier.
The pulled pork was as good as I normally get out of the Bradley and the ribs were by FAR the best I have done. I followed your modified 3-2-1 almost exactly, the only difference being that they were done when I unfoiled them so I just put them on with the sauce long enough to carmelize it (maybe 15 minutes).
I did burn some of the ABT's. Clearly the biggest part of the learning curve will be understanding that this thing can get HOT vs. the Bradley which probably tops out at 250 or so.

Quartered chicken was great but I wasn't totally satisfied with the rub. I need to order some of that apple rub that you guys have listed in other threads. Te meat itself was moist and delicious. Ribs were fantastic (I used the Cowboy Way), Drunk Tank beans for a crowd rocked the house.
I'm seriously needing to curl up into a ball and digest this food. I haven't even watched much of the game because we are getting pumped for some homemade strawberry cheesecake for dessert.

This entire spread looks fantastic. The huge grill basket cracks me up but I can see the utility. I love love love grilled onions but find them annoying for the reason you state....you try to flip them and they fall apart. The grill basket might be the answer.
What was your steak rub? Looks like evo and fresh cracked pepper?
I need to get one of those drunk tank therma pins.
Me too. For there only being 3 families here a lot of good was put away. All the ribs, all the ABT's and about 1/2 of the pulled pork. Not to mention all the sides, salads, etc.

I picked it up on Amazon not realizing how big it was. I almost sent it back, but I am glad I didn't. I have two smaller grilling baskets but I rarely use them anymore. I find that I can completely fill this one up and everything gets eaten. Fits the grill perfectly and only $23 on Amazon.
