              Did you also have a ton of leftover filling? I think I could have made about half what the recipe called for. I'm not complaining though, I'll just make more cookies and use the remaining filling.

                Made me wonder how thick the writer of the recipe piled the filling on - like 2 inches? I hate to admit that I ate one this morning right out of the refrigerator, and they are really good cold. And when the filling is cold I could have handled more filling than I put on last night. I also thought there are lots of things I could put that extra filling to use on. For instance, it would make a terrific icing for some orange rolls.

                  I gave these a try tonight. Very tasty and not that difficult. The recipe makes a ton of cookies and yes I also had a ton of filling left over. Half the people in my building are getting a plate of cookies tomorrow or else I'll gain 10 pound in the next couple days.

                  • These babies are the bomb diggity. Crispy on the outside, and chewy on the inside. Rich flavor.

                    Follow the directions, except for the cookie size. 3.5 oz is ridiculously large. We also used Ghirardelli milk chocolate chips.

                        That is an interesting approach. The approximate half-and-half mixture of the lower-gluten (8-10%) cake flour and the higher-gluten (11.5-13%) bread flour yield a fairly good approximation of AP flour (10-11.5%) while adding the emulsification qualities of the cake flour. I'm intrigued. And any CC recipe that requires dough refrigeration and a sea salt capper (borrowed from seriouseats' recipe perhaps) is alright in my book. Would rather the ingredients were metric, but I can deal with it. Will try it this weekend after I acquire some cake flour.

                          • I will try this receipe. I might knock off the Mrs. Fields Oatmeal Cookie (with ground oats, of course) as my go-to receipe.

                            Also, I found this bit in the recipe odd:

                            2 cups minus 2 tablespoons (8 1/2 ounces) cake flour
                            1 ⅔ cups (8 1/2 ounces) bread flour

                            Why not just say 1 2/3 cups (or 2 cups minus 2 T) for both? Am I missing something?
