Buffalo Wings....what is the best way to make them?

          I'm trying something I've always wanted to. Since I still have oil in the deep fryer from doing the turkey on Thursday, last night after the Duck game I ran to the grocery store and bought a small fryer chicken. Injected it with a bottle of Frank's Red Hot, then poured the remains over the top of the bird to brown the skin.

          It should take about 5-6 minutes in the fryer, then in theory, I will have an entire hot wing flavored chicken. Has anyone ever done this? Am I missing something that will make this not work?

              As long as it cooks evenly you should have no problem. Will the wing sauce burn in the fryer?

                    Average. It was a good chicken, but only had pockets of flavor. I have never had the marinade stay in one spot while frying a turkey or chicken before, so I don't think it was improper technique.

                    I would just do regular wings next time.

                      Orange Marmalade Sriracha Wings

                      Citrus rub for wings
                      You can make your own but I just use McCormick Grill Mates Chicken Rub.

                      Orange Marmalade Sriracha Sauce
                      1 - 18oz Orange Marmalade (I used the generic store brand, you can buy gourmet if you choose)
                      1/3 Cup - Sriracha Sauce
                      1/3 Cup - Honey
                      1/3 Cup - Brown Sugar

                      Directions - Combine all ingredients in a heavy sauce pan and heat over medium heat, bring to a boil, stirring constantly to dissolve the sugar and combine ingredients and remove from heat.

                      Grilling Directions - Grill wings indirect at 350º for one hour or until golden brown. Then dip the wings in the sauce, then place back on the grill and continue to cook 10 minutes and repeat one or two more times. When you're done,you should have a 'candy like' glaze.

                        Are you using a smoker for your indirect heating source? Don't have access to a smoker here so I wonder how the recipe would be adapted for direct heat of a gas grill?

                        • BTW, I made wings about 3 weeks ago, and I tried Surfah's corn starch idea. It will now be standard practice for me. It made them crispy without all the breading. Very good, Surfah.

                            Typically I just load up one side of a gas grill and use flame on the other half. I'm going to have to experiment today because I'm cooking more wings than usual and I need most of the grill space. I'm going to go with direct heat and take a guess at a shorter grill time.

                              Please let me know how it goes. I like your stopgap method of putting it all on one side, though. 45 mins of high or low flame? That isn't a bad idea if you don't have a smoker.

                              Are there gas grill attachments to buy that can turn the direct flame into an indirect heat source? Seems like there would be.

                              Anyhow let me know how long you cook over flame. Id be interested in trying out your recipe, sounds good. I wonder if it would be wise to combine surfahs corn starch tip to your recipe. Would that be blasphemous?

                                I certainly don't have rights to the recipe. Try it out and tell me how it goes. I have used 45 minutes at about 300 degrees, which would be med to med-low on my grill.

                                I have a meeting at 2:30 so I'm going to put the wings on the grill around 4:00.
