  • Buffalo Wings....what is the best way to make them?

    We have had several discussions about where people like to go out to eat wings.

    Does anyone here make them at home? If so, any reliable recipes for sauces? What about methods of cooking them?

    I have been jonesing for some wings and would like to try to make them.

      I like to bake mine in the oven then coat with the sauce. I'll baste them on both sides when I flip them half way through the cooking time. I don't have the recipe I use with me, but it includes a healthy amount Louisiana Hot Sauce and Tabasco. I've done it in a crock pot too, but you have to be careful about making them too mushy that way.

        MSCoug's recipe for Winger's wings:

        - Heat Canola Oil to 375 degrees
        - Use thawed wing pieces
        - Dunk the wings into Frank's original red-hot sauce, then coat in a combination of 1/2 cup cornstarch, 1/2 tbsp Lawry's season salt, 1 tsp garlic powder
        - Fry for 7 minutes (internal wing temperature needs to be above 160 degrees)
        - Coat in a mixture of 1/2 cup Frank's, 1/2 cup brown sugar and 1/4 cup melted butter
        - Serve with Blue Cheese or Ranch

            I don't understand why anyone would want to ruin Frank's by adding a 1:1 ratio of brown sugar to it.

                I have been happy with just bbq them and lathering on Frank's hot sauce. I actually preferred grilled wings to the typical deep fried buffalo wings.

                  We're doing homemade pizzas tonight and I am going to do some wings. They're currently thawing. I put thawed wings into a bag with corn starch. I like corn starch because it gives a nice crisp without the breading. Shake until coated. Then I deep fry them in oil. Oil must be hot. Remove and drain oil once cooked. I add 1/2 cup of Frank's Red Hot Sauce with 1/2 stick of melted butter in a large bowl. Blend well. Then I toss the wings in the bowl. Remove and eat. They're perfect.

                    Statman has the best recipe. Its very similar to Surfah's recipe, above.

                      My recipe is essentially Statman's. Though I think the corn starch coat is mine. I like the extra crisp it give than just naked wings. I am not a fan of breading on wings and the corn starch gets a nice crisp coat. It works really well when I do boneless breast tenderloins for Gidget, who doesn't like meat on the bone - not like that you sickos!

                          What sort of oil do you use? vegetable? do you use a deep fryer or simply a cast iron skillet?

                          what do wing joints use to introduce heat into the sauce? Is it your generic Tabasco Sauce?

                              where is this recipe?

                              i cant bring myself to do a search for a statman thread. Maybe in another year or two, but not now. Im just not ready.
