Buffalo Wings....what is the best way to make them?

I tried 2-3 different rubs, but just a general purpose bbq rub seemed to work the best. Inspired by Lebowski I decided to smoke some wings tonight. I mostly followed his instructions above.
Started with a barbecue rub. The wings were still slightly frozen so I started them on the smoke setting of the Traeger for 20 minutes.

I then turned the heat up to 350 and cooked for 40 minutes.

I added the glaze and then cooked at 225 for twenty. I just finished eating the results and they were fantastic. Some of the best I've ever had. This is my first smoking success with chicken. The rub had a bit of spice and the sauce was sweet. It was a nice combo.

The best way to do wings IMO is to smoke them for an hour or so and then finish them off on the grill. Some guys I have read actually smoke then flash fry. It's the only way to get the skin crisp. You can get the skin pretty crispy on the Traeger at 350-400 deg. I will have to try the finish-on-the-grill option when the weather warms up. I went a little longer than Lebowski before putting on the glaze. Next time I'm going to skip the first twenty minutes on smoke and go immediately to 30 minutes on 350 followed by another ten minutes as hot as I can get the thing. I'll finish on 225 for twenty. Hopefully that will make things a little more crispy. In spite of the skin not being really crispy the wings were very nice. They weren't dry at all and had an excellent flavor.

There's only one way to make Buffalo wings. Deep fry, baste afterward in vinegar-based cayenne pepper sauce (Frank's is tops) mixed with a little butter, with bleu cheese dressing.
