Buffalo Wings....what is the best way to make them?

      Ranch is associated with cowboys therefore ranch is definitely manlier than frenchie Bleu Cheese.

      I like frenchie bleu cheese better than ranch but I am in touch with my inner euro.

      • I also enjoy ordering really hot wings and eating them straight up, no bleu or ranch. Do people in Western New York ever eat them this way?

          This is the way I do it. I can't stand bleu cheese or ranch on anything. Especially wings. Hot and straight. Just like the way I like my women.

              • I'm just beginning to appreciate the traditional Buffalo wings.

                I prefer wings that are sweet with some spice to them - like the Winger's wings.

                Bleu Cheese and Ranch are similar enough that I am happy with either. I think that they add to the flavor.

                I swear I could drink the Winger's sauce straight. But then, I've always had a bit of a sweet tooth...

                  If by hot wings, you mean Buffalo wings, I'm sure some do. I personally don't know anyone who does. We're pretty provincial about these kinds of things.

                    It's not about toughness. Buffalo is as tough a town as there is. But it's also a town that doesn't embrace outsiders suggesting there's a way to improve on perfection, either.

                    A lot of what I'm saying about wings is tongue-in-cheek bluster (save for the preparation method. I eat at Buffalo Wild Wings regularly because it offers a ton of sports, decent food and cold beer. Plus my kids like it. Note that I would NEVER eat at a BWW in WNY, though).

                    But if you've lived in WNY and seen how the region isn't anything close to what it used to be, you'd understand why some of us are a little protective about the Buffalo wing. More than the Bills or Sabres, it's what has forever put the city in a favorable light. Heaven knows it isn't our history of runner-up finishes in major sports championships.

                    • I smoked some more wings tonight trying to to better my previous effort mentioned above. My method was to sprinkle with a Cabela's chicken rub and the put them on the smoker for thirty minutes at 374. It's cold out so at this setting the temp only hit 311. I then turned up the Traeger as high as it would go and let the wings cook for another fifteen minutes. The temp hit 410. This was an attempt to add a bit of crispiness to the skin. I then applied the glazes and cooked for another fifteen on 225 in an attempt to give the wings a bit of a smokey flavor.

                      The skin was more crispy than my last attempt but wasn't quite what you'd get if you put them on a gas grill for fifteen minutes. Still, the skin was quite nice. I think next time I may cook on 375 for 25 minutes and then crank the Traeger up to full blast for twenty minutes and see if that adds a bit more crispyness to the skin.

                      Here are some pics with the sauces I used:

                      The first was the sauce I used last time. I got it it Clear Springs Spas in Orem. It's an asian barbecue sauce and has a very nice flavor.


                      The next glaze was a chipotle sauce I got at Walmart. The flavor was more subtle but it was a very nice compliment to the other two sauces lending a bit of variety.


                      The second proved to be the best of the bunch. It's a hickory teriyaki barbecue sauce I got from Walmart. While we thought this was the best all three were fantastic. Both of my roommates thought they compared to the best wings they ever had.

                          My first effort at smoking nearly killed me so I figure there's no place to go but up. I'm dieting so I thought it would be nice to become proficient cooking poultry.

                          The wings come that way from Smiths and are quite cheap. I could cut them up similar to what you see at the wing restaurants but I like how these fit on the smoker. You're right they are quite large.

                              Thanks man! The roomies are well fed that's for sure.

                              I give two big thumbs up to the hickory teriyaki sauce I used.

                                Thanks for introducing me to that site. I had a wing craving today so I made the mistake of shopping hungry. Looking forward to trying that Mandrin BBQ sauce.

                                I picked up a couple of these also.
