Buffalo Wings....what is the best way to make them?

    I think starting with a good healthy dose of rub initially makes a big difference with wings. It gives it a good base of flavor that you can leverage with the glaze/sauce.

    Wings are a lot of fun because they are easy and they don't take very long to cook.
    Yes, Costco sells it. It is usually by the Yoshida. That's what gave me the idea.

    What flavor of rub do you use for the Asian flavored wings? I have a citrus rub I will use when I try the PE Orange Chicken sauce. I'm not sure what I should use for the mandarin wings.

      I just use my general purpose BBQ rub and it tastes great. I tried the apple jerk rub once with the mandarin glaze and that did not work out.

      Citrus rub? Hmmm.... We need to start a rub thread.

      • The Cabela's general purpose BBQ rub works great. I agree with JL that the rub provides the base for the glaze to shine.

        • I really like the orange-sriracha glaze, but I've read of others that have swapped out the orange marmalade for a variety of flavors - raspberry, watermelon, peach, etc.

            I use the raspberry chipolte sause as the base for a wing sauce I make. It works by itself well too.

              love love love that glaze. We have substituted with homemade plum, rasberry, and apricot with good results. It has worked well with all the flavors of jelly but I like orange the best.

                • The other day I had these Indonesian chicken wings that were awesome. Reminded me of Korean fried chicken. Yum.

                  • Did a wing trial run before Sunday. I will not use as much rub and flavoring as I did today going forward. In fact I may simply go with a little salt and pepper only. The five flavors were Panda Express Orange Chicken sauce, plum chipotle, roasted garlic peanut sauce, Traeger Mandrin and Aprocot BBQ sauce. The pictures didn't turn out, but overall pretty good. Oh, and the bottle basters worked really well. They make a mess after using if you're not careful, but very effective.

                      Also, what was your technique? Did you marinate in sauce before cooking or apply sauce midway through?

                          I liked the plum chipotle the best followed very closely by the Mandrin. The PE sauces wasn't bad at all, but would be better on a breast I think. The garlic peanut was decent, but didn't work with the rub.

                          I cooked the for about an hour at 350 then put the sauces on and dropped it down to 300. Not as crispy as I would have liked but very tender and flavorful.

                          On, my Maverick is officially dead. It didn't last 6 months. Kind of frustrating. Looking for a new thermometer now.

                          • Not sure if anyone would be interested, but F&W had a whole bunch of wings recipes on their site and it made me think of this thread. Sriracha, honey-chile, thai green curry, maple chipotle, etc.

                              jeff lebowski, did you do anything special for the yoshida wings or did you just coat them with the yoshida straight outta bottle?

                              I'm doing some orange sriracha, yoshida teriyaki, and some apricot BBQ.

                              Do you guys rub overnight? (not THAT, sickos!)

                                Nothing special with the Yoshida. Straight out of the bottle. One of these days I am going to toss in a little crushed garlic and ginger with the Yoshida's, just to see how that turns out.

                                I throw on the rub right before I put them on the grill.
