So whose truth is truth? Whose preconceived beliefs going into a discussion should be held strong because they are true and whose should be open to change because they are untrue?

Glancing at the DNews report, it appears that Pres. Uchtdorf addressed this.

The invitation to trust the Lord does not relieve anyone of the responsibility to know for themselves, President Uchtdorf said. Each has a personal obligation to seek out and find truth.

As you accept the responsibility to seek after truth with an open mind and a humble heart, you will become more tolerant of others, more open to listen, more prepared to understand, more inclined to build up instead of tearing down and you will be more willing to go where God wants you to go," he said.

My two cents:
The absolute truth in your circumstance is that Sunday is the Sabbath and that keeping the Sabbath holy is a commandment of the Lord. Both you and your friend are entitled to personal revelation as to how that commandment applies to your individual facts and circumstances.
Furthermore, I believe that Pres. Uchtdorf's statement that a true seeker of truth is more tolerant of others indicates that as we find these truths, be it through research or revelation, we can accept that the while the Lord's general message applies to all, its individual application is uniquely tailored to each of his children.

I think most members would be happy to heed that council, but there are the few who would interpret what he said differently than you and I do.
