I'm doing something different for Christmas dinner this year. Tamales. Red pork tamales to be exact. That sounds great. The CJF Christmas Lunner menu:
Prime Rib with au jus and/or horseradish

The menu was put together for 20 or so and about 50% have canceled due to Covid. So this will probably be our meal today and the rest of the week.

For future reference, they sell “homemade” tamale masa at most supermercados Latinos. I used to do a big Christmas dinner with a rib roast as the centerpiece, but ever since my son left, I am the only one who really loves it. Also, we do a huge "breakfast", which is usually around 1:00, which makes a huge dinner somewhat redundant. So for the last few years we do charcuterie, and then I also get some filet steaks from Costco, and I cut them thin, griddle 'em up, and have sandwiches on King's Hawaiian rolls. It's not the fanciest but my daughters like it.

How many of you have the big Christmas dinner on Christmas Eve vs Christmas? Growing up it was on Christmas day but my wife wants the meal done on Christmas Eve partly due to her heritage and partly to just relax on Christmas.
Last night we did shredded beef tacos and had extended family over. I've been snacking on leftovers today but I'll probably make pan pizzas in a cast iron pan in a couple of hours.

I wish I had done that. The flavor of the tamales was good, but I think I screwed up the consistency of the masa. The tamales came out like individual packets of tamale casserole wrapped in corn husks. After much googling the consensus is that I either had too much liquid in the masa or not enough liquid in the masa or that I didn't steam the tamales long enough or that I steamed them too long. image.jpgMy wife was happy to adopt my family’s tradition of getting Chinese takeout every Christmas Eve. Unfortunately the place we have gotten it from for over a decade has gotten very popular and crazy on Christmas Eve. This year we ordered it at 3 pm and it was ready pretty quickly, so I guess the rule is order it before 4 pm.
We did fondue this year for Christmas dinner because that is what our exchange student usually has. We had some pork tenderloin to dip in oil and some vegetables and bread to dip in cheese. It turned out great. The cherry on top was the Swiss fondue chocolate that his mother sent us. It was so good. It was a bag of chocolate balls by this company https://www.chocolatfrey.com/.
