    Pepper's Mom's Panipopo

    4 cups flour, level measured
    1 package active dry yeast
    1-1/2 cup warm water
    1/2 to 1 tsp salt
    2 tablespoons sugar
    1 can coconut milk
    1 can water
    4 tablespoons sugar
    1 tablespoon or more cornstarch

    Grease a 9x13 cake pan
Measure flour into a large bowl
Combine yeast, warm water, salt and 2 tablespoons of sugar in a small bowl. Let stand 5 to 10 minutes, then add to the flour. Knead for 6 minutes
Let rise 20 minutes or until doubled. Punch down dough and form balls the size of large meatballs.
Set dough balls into the cake pan without touching each other.
Separately mix the coconut milk with a can of water, the 4 tablespoons sugar, and the cornstarch. Pour this coconut mixture over the dough balls. They should float.

I made this chili or stew whatever your thoughts are about beans in chili. It was fantastic. The cocoa, coffee, and beer really made the base great. I decreased the brown sugar by half.

I went with a 4 Play Porter from Shades of Pale as the beer. I think a porter or stout is probably the best bet.

I'm sure it would be good even without the coffee, but I did love the flavor it added.

I used this mojo pork marinade. Rather than roasting a pork shoulder, I braised it in the marinade.

After cooking, I discarded the braising liquid and made another batch of the marinade without olive oil. I reduced it down a bit. I then chopped up some pineapple and combined the pork, mojo sauce, pineapple on corn tortillas. It turned out good.

I've also used this marinade for a roast pork shoulder as well and it turns out very good.

I've been using this recipe for Mac and Cheese over the past 10 years or so. Really as easy as it gets and delicious. Perfect for a weekday meal with some grilled chicken or whatever.

I'm intrigued by this recipe. My go to mac and cheese is made with a roux and then baked for a few minutes. I'll have to see how this compares.

Give it a try. Would like to hear your thoughts. It's quite a bit different than baked Mac and cheese. Much more like something a fast casual place like Panera.

Some will call this am abomination. Some a tasty treat. I wanted some chips and salsa this afternoon, but I needed some protein. So I just mixed salsa into the Greek yogurt, blueberry, protein powder drink I've been making for myself lately. I liked it. My oldest liked it. The only other kid I could get to try it told me it wasn't as bad as he expected.
