Pepper's Mom's Panipopo
4 cups flour, level measured
1 package active dry yeast
1-1/2 cup warm water
1/2 to 1 tsp salt
2 tablespoons sugar
1 can coconut milk
1 can water
4 tablespoons sugar
1 tablespoon or more cornstarch
Grease a 9x13 cake pan
Measure flour into a large bowl
Combine yeast, warm water, salt and 2 tablespoons of sugar in a small bowl. Let stand 5 to 10 minutes, then add to the flour. Knead for 6 minutes
Let rise 20 minutes or until doubled. Punch down dough and form balls the size of large meatballs.
Set dough balls into the cake pan without touching each other.
Separately mix the coconut milk with a can of water, the 4 tablespoons sugar, and the cornstarch. Pour this coconut mixture over the dough balls. They should float.
Let rise. Bake 15 minutes at 375.
