    Bought three ranchero egg kolaches this morning and didn't eat any of them. More beggars than usual on Main Street today

    I did make some mean omelettes on Saturday morning. The kids totally loved them.

        Breakfast burritos on Saturday with scrambled eggs. Sunday was also scrambled eggs but with cinnamon toast on the side.

          I cooked a variation of egg-in-a-hole for breakfast today. Instead of frying the egg in the middle of toast, I fried it in an avocado and topped it with some green chile salsa. It was delish!

              This did not work out so well. The yolk kept separating from the whites. Maybe the eggs weren't fresh enough. I ended up making a plastic wrap "cup" and put the egg in the there, twisted it shut and tied it off. This way the eggs would poach in the plastic wrap and not separate. Only problem is the egg whites stuck to the plastic a little bit.

                that's weird. were you stirring while the egg was in the water?
