      I can do the one handed crack.

      The pan flip, however...

      I use a spatula.

        Don't worry about the wondrous pan flip. It's a personal choice. If you're cooking for a lot of people, as I usually am, go with one of these. I can do the pan flip, no problem at all, but why drive the wagon close to the edge when the center of the road is safe and wide?

          Wuap, that's OK that you are too uncoordinated to execute a simple pan flip. You are right. Being super popular and having so many friends at your house is more impressive.

                I can, or at least could 18 years ago, start a run of 12 regs (10/1 burgers), toast the buns, lay the patties on the grill, dress all 12 burgers (mustard, ketchup, onion, pickle, cheese on 12---in that order), pull the patties two at a time, then pull the heels from the toaster, flip the entire tray of toasted heels onto the tray of fully-dressed 10/1 regs, in under 60 seconds. Flipping a fried egg in a pan ain't no thing. I'm cooking for family. Popularity by populating.

                  I have never tried the pan flip with eggs, but I do it with pancakes sometimes.

                    I have a friend who was a short order cook. He can crack four eggs at a time and place them in a bowl or pan with no spills or mess.

                          • I guess this is as good a place as any to admit: I love eggs. Plain, hard-boiled eggs-- not too dry, mind you. However, it seems you gotta boil em yourself to get a good result; I bought a pack of pre-boiled eggs from Costco and about gagged on the first bite. I'm also pretty good at shelling em. Check it out- Slice like a ninja, cut like a razor blade!

                                Very serious. Slice that thing in half and drizzle some soy paste over the top. Goes perfect with any Chinese meal.
