What's for lunch?

  • I don't know why, but around my office has kind of become great for various types of tacos:

    1) Holy Tacos: great for al pastor tacos. They having nothing but al pastor;
    2) Red Tacos: just opened up a brick and mortar store. Amazing quesabirria tacos
    3) Jurassic tacos: just opened up a brick and mortar store. Fantastic carne asada.

    I'll be having tacos of some variety today. Not sure which.

          • Hey friends. I'm trying to be better and stop eating out every freaking day. It's obviously not healthy, but with inflation, it's getting pricy. I work in home health, so I'm constantly driving between patient's homes and don't have a base where I can stop to eat lunch.

            Question: Any of you have any easy meal prep recipes y'all do? Good resources? I have a couple families I'm cool with asking to use their microwave to reheat. I just have been in such a rut of eating out daily that I'm not even sure where to start!

            • Spread peanut butter on a slice of your preferred bread, then spread jam, jelly, or marmalade on a second slice. Gently press together the two slices (with the bare sides to the outside).

              Place in a sealable plastic bag for later consumption.

              No microwave needed.

                This is actually my go-to at work. I love it. Sugar free marmalade and extra chunky Skippy on Dave's Killer Bread.

                  Well, I mean, that's the plan SOME days, but I like variety and good food too.

                  • My wife takes salad a lot of days, my kids too. Buy those prepared salad bags. We get the bigger ones that are multiple servings, good for a couple days. They like the southwest ones or the chili mango, ones like that. Then slice up a chicken breast or some leftover pulled pork and put that on top.

                      I needed something like this too about a year ago. I really like Freshly. Its a pre-made meal service. Its not exactly cheap, but its cheaper than eating out. And the bonus is its generally 600 calories or less, so it helped me lose 30 lbs. They are delivered fresh, but you can freeze them. If you are out and about all day, I would just take one out of the freezer in the morning. By the time its lunch time, it will still be somewhat frozen and ready for the microwave.

                      I do 8 meals delivered every 2 weeks. With tax and shipping its like $92. $11/meal seems kinda high for what you get, but I think they are tasty and they prevent me from spending $13 on something less healthy.

                      Apparently this will give you 12 free meals? And I get a credit too I’m sure.
