    Did you pull them right out of the smoker? Any rest at all? No FTC could make a big difference in the perceived dryness. The rest allows the juices time to re-distribute through the meat. Also, I FTC with apple juice/vinegar mixture as well, as much as 1/4 cup per roast in the foil which also helps in the moisture dept as well.

    As far as cook time goes, I have found that the bone-in roasts do take longer to cook.

        Next time I will use a bigger roast and allow more time so that I can FTC.

        On the plus side, one family got back to us today and said it was the best pulled pork they had ever tasted. So it wasn't a total loss.

          Not to rain on your pity party but that pic you posted of the allegedly "dry" pulled pork.....sorry, not feeling much sorrow for you or your guests on that one.

          Is it overkill to have a thread for preferred places to purchase different cuts of meat? Where do you buy your pork butts?

            There is a woman in our ward undergoing chemo so my wife volunteered us for Sunday dinner. I cherry-picked the best parts for them but I was still a little nervous. And people that don't cook like this at home are easier to impress.

            For meat in general, I have had the best luck at Harmon's and Coscto. But Harmon's rarely carries big pork shoulder roasts for some reason. I also like to go over to Springville Meat Co. sometimes, but you have to special order things there. For example, that is the only place around here where I have found whole packer briskets but you generally need to give them a few days heads up in order to guarantee that they will have one on hand.

            I have a friend who used to work in the meat-packing business and he says that Costco has the best overall quality of meat, hands down. Especially when you consider the price. But you have to take the big quantities.

              That's interesting. A couple of years ago we got some pork roasts from Costco but were unimpressed, as they had very little flavor. So we typically don't get meat from there anymore. Has anyone else had that experience? Or are you all just getting the big packages of ribs, shoulders, and briskets, and not the regular roasts?

                Sunday we are blessing our daughter. For the big family dinner after we are having chicken enchiladas. That doesn't do it for me. Lately I've been craving pulled pork so I'm thinking of doing pulled pork tacos to compliment the enchiladas. Has anyone changed up their normal recipe towards tacos? Chris Lilly has a jerk pulled pork that looks interesting that I may try, but I'm open for suggestions.

                  A recipe I found on a Mexican website. Trying for the first time.



                  And the jerk butt. Also first attempt. I'm very curious how this will turn out. Not sugar in this recipe so it will look very different from a normal butt.

                    Overall pretty good turnout. All three had their own distinct flavors.

                    The butt on the left is the jerk pork. I was very surprised at how dark it got. There was no sugar in the recipe. Very good flavor.



                    The jerk pulled.

                      CJF, the tacos look great. What else did you put on them?

                      Edit: the jerk pork looks good. Get some Grace brand Jamaican ketchup on it with some white bread and you've got a treat.

                        I made a chopped onion, cilantro, and lime juice mixture. Threw on cabbage, sliced avocado, and squeezed some fresh lime.

                            I love pulled pork tacos. Good idea to go straight to the tacos and bypass the sandwiches. I should try that next time.
