Oh a prime rib thread! Perfect! I stopped into Firehouse Subs for the first time in like 8 years and ordered the prime rib sandwich. They looked chagrined when I ordered it and a guy came up and whispered something to the cashier, who told me it would be a little bit of a wait. I told them nevermind and just ordered the meatball sub instead.
I've said it over and over, but tri-tip is my favorite meal. And I love it many different types of meals. Right off the grill, the next day in a sandwich or tacos or chili etc. Tri-tip is awesome.
In the (and other beef) category, anyone doing tri-tip? Mrs. NWC brought one home and I looked for a recipe. Found a reverse sear one that said to rub it with only salt and pepper. Smoked it until it hit 130, then on the grill 4 minutes each side. Had it with chimichurri sauce, and it was very delicious. But the best part was hoagie sandwiches after. Warmed up the sliced meat with smoked gouda on top in the skillet, carmelized some onions, and man that was one of the better sandwiches I've had.
I haven't looked in a while, but they are typically in the section with the prime cuts. They aren't cheap.
I'm going to put my wife on alert. Next time we see a rib roast on a good sale, we jump on it. The guy in the video carved the thing up into eye, cap, and ribs. I want to give that a try.
Oh yeah, that has always been my favorite part. Sometimes at my local Costco you can buy packages where are they trim off that part and tie it with a string and make a little steaks out of it.
Probably not the healthiest steak out there, but that sounds amazing. Where do they put them? Or do you have to ask?
