I just stuck them in the oven at 400, intended to pull them when the temp reached 125, but the pastry wasn't yet done. I had to turn on the broiler for a couple minutes to brown the pastry and by then the temp had jumped to over 140, but the meat was just fine. Snider's also sells a Hunter Sauce, like a mushroom beef gravy that goes with the beef wellington.
