Wow, surprisingly delicious.

Really enjoyed Wuaps chimichurri.

About a fourth of it was really dry and the chimi worked great for that, about 3/4 was absolute money, bend test crushed some of the bends in this thread, kept it only to salt and pepper, didn't need BBQ sauce, 8 adults devoured it and no complaints.

Followed JL's method and it was really good.

Therm is hitting 190, about to open the oven and drop the temp, hoping to eat in 2 hours.

House smells great.

I was surprised by the flat, it was swollen like a tri tip at 165, I'm sure that's some bad sign.
