Now I am even more confused. I love the way the meat tastes. The whole hobby part seems like a lot of work. I do grill occasionally (although on gas, which I know many here think is an abomination). I see a WSM is a couple hundred bucks. Is it worth it knowing I will, at most, be an occasional practitioner?
What JL means is that it can and likely will become an addicting hobby for you, thereby consuming more time. For a beginner, it doesn't have to be time consuming at all. Ask PAC....he just got started and immediately cranking out top-notch dinners right and left. Smoking is not very difficult. But it is a lot of fun and the results are usually ab-fab, so you naturally gravitate towards it more and more. I was introduced to smoking via the board and now a few years later I am cooking for relatives weddings, kids soccer parties, family reunions, im buying crazy smoking cabinets and also wanting to learn more about comp circuit cooking. I love the hobby even though a few years ago I was a lazy slug like donute and markgrace.

creek, at this point I'm like the new but naïve convert who gushes at FT meeting but whose doctrinal knowledge is near zero. Still, I concur with the testimonies of others. Other than the initial capital outlay, it's really easy to get started and it's a lot of fun. There are hundreds of great recipes that are easy to follow (not to mention the abundance of expert info here on the board--and I loved getting a text from JL mid-cook with some counsel) and the pride of authorship is very high. The ribs I did Friday were a big hit at the small party we attended and Mrs. PAC is loving the fact that I'm doing more dinners than she is of late--I've done more in the past week than I used to in a year. Tomorrow night I'm taking a stab at a honey mustard pork loin thing. I'm sure the habit isn't for everyone, but so far I'm really liking it.
