- 48-56 racks of ribs
- 28-36 briskets
- 30-40 boston butts
- 80-88 chicken halves.
And don't worry, DT. It is less expensive than one of those big Kamado eggs.

Yes. He had probably 3 or 4 18.5" WSMs in his back yard as well as a 22.5" and his fiancee's 14" WSM. He said he competed once using a Smokey Joe and a tamale pot with a hole cut in the bottom of it. He seems to like what he would call the "price efficiency" of the WSM - $300 for a smoker, less than half a bag of Kingsford to fuel an entire cook, etc. I hadn't seen one live in operation before, but they look like good units to me.Originally posted by Drunk Tank View PostHey, I am a backyarder who just happens to dabble in catering. I have heard great things about Harry's classes and most people that I know who have been really enjoyed them and learned a bunch. Does he still do a majority of his smoking on WSM's?
He also had a Green Mountain pellet smoker and a kamado, but I don't know how much he uses those. I think GMG is a SYD sponsor."What are you prepared to do?" - Jimmy Malone

It was always funny to watch Harry Soo on the BBQ Pitmasters during Season One. Everyone else has these nice professional smokers with big trailers and RVs and Harry is competing with a station wagon and a bunch of WSMs. Everything he did seemed low budget. He also seemed completely lost trying to figure out how to satisfy the southern judges who all had a sweet tooth.Originally posted by Joe Public View PostYes. Seemed like a super nice guy, however. Would be fun to meet him."There is no creature more arrogant than a self-righteous libertarian on the web, am I right? Those folks are just intolerable."

Time to start saving. Stumps website says there are 3.5" between shelves, but that looks to be more like 6-7".Originally posted by Jeff Lebowski View PostYes indeed.

I think that is a custom build or an old model. Pretty sure they are made with 8 sets of rails and it ships with 5 racks, but you can add an additional 3 racks.Originally posted by Drunk Tank View PostTime to start saving. With the classic, there are 7 rails and 5 racks. Rail spacing = 3.5 inches."There is no creature more arrogant than a self-righteous libertarian on the web, am I right? Those folks are just intolerable."

I got a Traeger for Christmas and I just finished putting it together today.

Nothing wrong with a Kamado. They are so versatile. I loved my BGE, only issue was space. I found myself using my Traeger more often.Originally posted by FN Phat View PostI have yet to unpackage my kamado and yet all I can think about is a gravity feed. I assume Traeger's should be seasoned, no? If so, it's probably worth the pellets and time to do that before your first cook. [Sorry if I'm being Captain obvious, but I was so excited about my first smoke on my first smoker that I sort of hosed myself with the high temps and bad flavor]Originally posted by The_Douger View PostI got a Traeger for Christmas and I just finished putting it together today.

I didn't season. It's not like the thing is a dutch oven.Originally posted by Green Monstah View PostI assume Traeger's should be seasoned, no?
