Weird. I don't have either and I don't have to get up in the middle of the night to tend my smoker

We cannot expect to experience the blessing of faith by standing inactive on the sidelines any more than we can experience the benefits of health by sitting on a sofa watching sporting events on television and giving advice to the athletes. And yet for some, “spectator discipleship” is a preferred if not primary way of worshipping." -Pres. Uchtdorf

    • I disconnected the hot rod and replaced the fuse. No dice. Oh well. They will send my parents a new board and I'll get it in January when I head to the U.S. for meetings. For the $150 purchase price, not bad.

Says the guy who has repeatedly claimed that he enjoys the constant tending of his smoker during a cook. Knock it off.

The class was $375 per student. I tend to not like to spend a lot of money on hobbies, but I would do this again in a heart beat.

We were all backyarders in my class. It would have been interesting to have a caterer/restauranteur or even a comp team person in there to get another perspective.

Hey, I am a backyarder who just happens to dabble in catering. I have heard great things about Harry's classes and most people that I know who have been really enjoyed them and learned a bunch. Does he still do a majority of his smoking on WSM's?

I think I am going to start in earnest this next year to save up to buy another smoker. My FEC is becoming too small for larger cooks and I have found that I have issues with temp when it is overloaded. I wasn't super happy with the food I put out last night, even though it got good reviews. All day long I had issues with the smoker. Started with the auger pin shearing off, then I had pellet issues. Not sure if it was moisture or if they were too big to feed properly, but I couldn't get my smoker up to temp at all. Not even close. I swapped out pellets and that issue fixed itself. In the end however, I had too much meat in the smoker and it ended up too close to the temp probe and it was causing a false reading and the smoker was much hotter that what it was saying, at least in the lower 1/3 anyways. So I either need a bigger smoker, or a second smoker. I like the FEC100 because it is so easy to use most of the time and we can use it as an oven or warmer if needed, but it has its limitations.

i have a 3-car garage. Smoker is in the back on the patio. It came with this super-thick all-weather cover that weighs around 30 pounds.

the stumps classic has been a great experience. lots of fun and lots of space.

I know. Hopefully you can fit your new Centurion FS44 in there as well.

I know the Assassin 28 will, but I think the quality of the Stumps is better. I think the Stumps classic like your will fit 2 steam pans side by side per shelf. What is the spacing between the shelves? I'm wondering if I would be better off going for the XL Stretch?

I'm picking up a welder again after the first of the year and toying with the idea of building my own. I have the know-how, but I'm just not sure if the cost savings would be worth the time and effort. I am going to build me a patio sized stick burner for fun.
