    Grilled Cheese

    My go to grilled cheese is made with a combo of sharp and medium cheddar cheese on sourdough bread (artisan style with crusts that crisp up easily). I butter the outsides and pan fry them. I put all the butter sides down and then add cheese on top and cover the pan with a lid. Once the cheese is melted I flip them together and continue browning as necessary. Fairly plain and simple.

    Tonight I went to make it but the only cheese I had was mild cheddar. Not a lot of flavor. This got me thinking what others do. Do you add anything other than cheese? What cheese do you prefer? What is your go to?

    Bacon is an awesome addition to a grilled cheese. A friend of mine uses mustard on the bread instead of butter. It is surprisingly good. It tastes kinda like an In N Out burger without the burger.

    I like your method. I might give it a try. Got to get some sourdough.

      I went to a grilled cheese restaurant in downtown LA once and had sliced apples on it. Was really good.

          Wait, so your friend fries the mustard side of a grilled cheese? Interesting. How does it fry up not being a fat?

            i like to throw a little honey - just a tad - and ham on the sandwich. and lately i've been putting chipotle aioli on it as well - which just seems to make everything better. and i should mention, swiss is my go to cheese for grilled cheese, but i'll use whatever i have and often a combination of cheeses.

              Oh man, I love grilled cheese. Great thread idea. Sourdough is very good. I also like to use a good multi-grain like Dave's Killer Bread. Liberal use of butter is key. My favorite cheese is sharp cheddar. Medium at least, but sharp or even extra sharp is way better.

              My go-to is a sharp cheddar on multi-grain and then I slather on a little apricot jam right before eating it.

              One variation that is fun is sharp cheddar, pulled pork, thinly-sliced granny smith apples, and a touch of honey.

                I too love a good grill cheese. Some variations that I do that haven't been mentioned here:

                1. Similar to using mustard instead of butter, I've used Mayo. It grills pretty well, but doesn't affect the taste too much.
                2. Add thinly sliced avocado. Like every other idea on here, adding fat to grilled cheese adds to the savory-ness of it.
                3. Throw in some basil leaves. Makes the sandwich smell great and adds a slight flavor.

                  I see a lot of people adding sweet to their sandwich. I much prefer savory in general, but I'm going to start trying some of these. I have never heard of Apple sliced in it until now.

                  last night I ate my grilled cheese with salt and vinegar potato chips to boost the flavor. There are some great ideas here though.

                    Fruit and honey pair really well with a sharp cheese.

                      to clarify - the touch of honey i generally add is mike's hot honey. so good.

                          Yep, in place of the butter. It fried up pretty well as far as I could tell. I didn't know he was doing it (and not using butter) until I asked if I tasted mustard. It wasn't the appearance or any lack of crisp of the bread that tipped me off.

                            My grandma gave me an "as seen on TV" electric sandwich maker for my 14th or 15th birthday. At the time I thought it was such a weird gift. She was pretty eccentric and out-of-touch, and had given me a number of strange gifts over the years. I told her thanks and promptly stashed the unopened box in the basement storage room.

                            I found the box a couple years after my mission and brought the sandwich maker to Provo. It's gotten regular use ever since (it's lasted so long because, unlike most sandwich makers, it's all metal). My kids use it all the time now. Turned out to be a pretty good gift and helps me remember my grandma even 15 years after she died.

                            Our sandwiches are usually white bread with sharp cheddar but sometimes I'll put Swiss in there. Best with tomato soup for dipping.
