I don't hate Cafe Rio.

I like Chipotle, and they whip up a very good guacamole.

Might I recommend the guacamole salad at Gabriel's, just north of Santa Fe on the old Taos highway It is made at your table with totally fresh ingredients. Worth the stop if you are ever in northern New Mexico

I really enjoy their coconut shrimp tacos (Tuesday special). And I have had EXCELLENT pork tamales there as well (Thursday special). But I've also had really crappy pork tamales there. I don't like risk in my dining, so I don't go there for lunch on Thursdays anymore. Maybe once a month on a Tuesday I'll go to the Cafe for lunch...

That's definitely not following the In-N-Out strategy of gradually extending your restaurants so as to not overextend your supply chain.

But, I can see the virtue of opening a place in DC. People from all over the country work there during their summers or a couple years and then they go back home. If you get big in DC, you can create demand in other places.
