So I've been curious about this. The people who make coffee this way swear by it, but I've never tried it. The thought is that traditional methods burn coffee by brewing it too hot and that you can get rid of the bitterness by lowering that temperature. The aeropress is a pretty popular recent addition that does this. Cold brewing takes it to the next step, but you extract flavor, you have to increase your time, pretty much to overnight.
