Matt and Mark Belini probably qualify. Solid receivers out of the backfield, ram good routes, but not on the radar as "greats".
I think he's still fresh on people's minds, but Curtis Brown will be that way eventually. He'll be overshadowed by Luke Staley who preceeded him and Harvey Unga who followed him. But Brown was a big part of that turnaround. Same thing with guys on the OL from the same time period like Jake Kuresa. Lack of an NFL career, especially with OL guys, really seems to have them be forgotten earlier.

Reno Junior Mahe is one of my all-time favorites. He made several huge plays in the Doman-Staley win against Utah- one was a hit that looked like it killed him, but he bounced up like nothing had happened, and gave the first down signal.
Side note: When Staley broke free down the sideline for his TD scamper was the a tie for the loudest I've ever heard LES; the Miami game was obviously the other.

Shad Hansen- guy was a quality linebacker for sure. He played the run well.
Tim Nowatski-Slowish, but amazing hands, part of a good corps
Chris Ellison- he came over from El Camino CC with Omarr Morgan. He was a good db in his own right. He was short for a safety but hit like a tuck.
Zac Collie- yeah Austin was amazing but Zac turned out to be a great walk-on success story

Meh. This isn't Cougarboard. We can separate Whittingham the player from Whittingham the coach (and let us not forget he was BYU's first choice as HC, over Mendenhall).
