I eat a decent amount of tinned fish, though not as much tuna. I eat a lot of mackerel, trout, salmon, octopus, mussels, and a few other things. You can get a lot of really good stuff in the $10-$20 a can range but I don't like to spend that much. Most of what I get is $5-$10. I forget which brands I get in all, but I have some Patagonia, Matiz, and Ortiz in the house right now.

You need to get over the vessel. Most canned food is crap because they include crap in the can. It's not the can the makes the food crap. Take tomatoes, for example. You won't buy better fresh tomatoes in the grocery store than what you can get in a can. If you buy good tomatoes in a can, you get tomatoes that were grown in a specific region in the world and picked exactly when the sweetness/PH levels were optimal (that's closely monitored). And that's the way it stays until you open the can. With tuna, they can the stuff on the boat. It doesn't get any fresher than that. If they're canning high end fish on the boat, you're going to be eating high end fish when you open the can. Not everything that comes in a can is crap.

100%. Went down a San Marzano tomato rabbit hole recently. Prior to that I had no idea of their advantages and superiority.
Pan seared salmon, skin side down 4 min and flip for 2. Temp was medium/low. Used extra virgin olive oil as my cooking oil. I think I prefer this to baking so far but I'm not good enough at baking yet to say for sure.

I prefer pan sear to oven. I do it with a cast iron pan outside on my gas grill side burner so I don’t stink up the house.

A super easy way to make a gyro-like meal at home. Slice some cube steaks into strips. Marinate in greek dressing for a few hours. Fry up in a skillet or toss on the grill. Serve on pita with cucumbers, tomatoes, banana peppers and tzatziki. Obvious not an authentic gyro, but pretty close. Could also serve as a rice bowl or on a salad. Simple and delicious.
