  • I've become obsessed with this Italian cook, and by extension become obsessed with guanciale.

    I don't have his exact recipes so I just wing it watching the video. This 'roman bacon and eggs' was easy and a big hit:



    I tried this one last night. It was alright but I think I burnt the fat from the guanciale. It had enough promise that I'll try it again:



    Every once in a while he dons the apron sans shirt. Part of his charm I guess.

      • I made tuna croquets (tuna patties, we called them growing up) last night. Over the holidays we received a gift basket that had, among other things, several cans of high-end canned tuna. My family tried making tuna sandwiches with it and didn't like it because they prefer the garbage Starkist tuna. I digress. Anyway, I took it and made a lovely dinner. Sautéed some finely diced celery and onion, then mixed with the tuna, some mayo, some seasonings, cracker crumbs, lemon juice, and an egg. Formed into balls and then seared off on my cast iron skillet. Served with sliced avocado on top and sprinkled with some chives and a drizzle of EVOO and a squeeze of lemon. They were fantastic, and my picky youngest even asked for seconds.
        Prepare to put mustard on those words, for you will soon be consuming them, along with this slice of humble pie that comes direct from the oven of shame set at gas mark “egg on your face”! -- Moss

          What constitutes a high-end can of tuna? What brand?

          FWIW: Trader Joe's has pretty good canned tuna. We do tuna melts occasionally. Tuna, mayo, pickles, red onions, chopped celery. I like to add in a few hot peppers on my sandwich.

          That reminds me, the sweet hot jalapenos at Trader Joe's are amazing.

            I eat a decent amount of tinned fish, though not as much tuna. I eat a lot of mackerel, trout, salmon, octopus, mussels, and a few other things. You can get a lot of really good stuff in the $10-$20 a can range but I don't like to spend that much. Most of what I get is $5-$10. I forget which brands I get in all, but I have some Patagonia, Matiz, and Ortiz in the house right now.

                    It was in square tins with a peel-back top. That felt fancy. Also, the tuna was white and in large fillets ( i would estimate each fillet was 1" wide by 2.5-3" long). I'll see if I can find the brand online.

                    As for jalapenos, i've taken to pickling my own. It is so easy, and the crispness they maintain is something that really sets them apart from something store bought. I make a couple mason jars and keep them in the fridge until they are gone. Then I make some more.

                              Oh man, there is a whole society of canned fish lovers out there with active subreddits that discuss the high-end ones. There's a new rabbit hole for you to go down next time you're bored.

                              I've been eating Costco's canned sardines (boneless, skinless because I'm a noob). Great additions to a salad or just to eat right outta the can.
