Whoa, mister! Do you have at least 18 graduate hours in thread evaluation? SACS won't accredit you without that many hours......so, you don't have the authority to dispense letter grades for posts. I recommend you give something else. Maybe stickers.

Dang! I shall retract the fraudulent grade and opt for the 5 pointed written star while refraining from the overlapping triangle 6 pointed variety. I wouldn't want to offend SU! I hear he likes his tacos puffy anyway.

Hey that sounds intriguing. Try the tempura and tell me how it goes.

I made these last night and they came out awesome.

However, I didn't use the tempura batter. I used this:

              http://www.prideofthewest.com/index.html

They have a recipe for a tempura batter by just mixing with club soda to make it more airy and light like you'd expect from tempura. Instead I just used cold water to mix it as I wanted something closer to what you'd get at Rubio's. This battered worked perfectly. As soon as I got home from work I mixed it to give it some time to sit. I put it on an ice bath to keep it cold. I sliced mahi mahi into 1-2" wide strips about 4" in length and patted the fillets dry. The battered fish came out awesome.

As to the white sauce, I mixed mayo and yogurt but it didn't quite have that tang I am used to with fish tacos so I incorporated some sour cream and the juice of one lime wedge. That seemed to be just fine. I shredded some cabbage and warmed some corn tortillas and that was that. I couldn't find any tomatillos, fresh or canned, at my grocery store and I didn't feel like traveling to another or else I would have made some green salsa to top with. But the white sauce and some lime sufficed.

I ate 4 plus a side of rice and black beans. Fitday is not my friend.

Pride of the West is the shiz. I good friend of mine in ID uses this batter often. He learned it from his fishing days in Alaska.
