  • Fish Taco Recipe?

    I am wanting to do some fish tacos this week. YOhio's post about his marinated Ahi tacos sounded great and put me in the mood. I am thinking more though of the Wahoo's or Rubio's deep fried fish taco. I mostly wondering about the white sauce and what a good batter to use would be. I got some mahi mahi. I was thinking about tempura batter and wondered if that would be good. As for the white sauce, a few google searches have turned up a few things. Usually a mixture of mayo and yogurt/sour cream in equal portions and then lime, cumin, and paprika to taste. One substituted the spices for some Tapatio or Cholula. I wonder if I wouldn't be better off substituting the yogurt/sour cream for some Mexican crema.

    Any other ideas? I'll shred some cabbage and make a tomatillo salsa with black beans and rice on the side.

    I'd go with the crema....the sourness of the yogurt will get masked by any lime you add, so the crema's going to add more to creaminess than the yogurt would.

      A few days ago on the X96 morning from hell show in Salt Lake they interviewed a man who ran one of the more successful taco shops in Utah. I didn't catch if it was Diegos or what. Kerry asked about the white sauce for fish tacos, and the man said it was a combination of plain yoghurt, mayo, cucumber and lime.

          Probably what I'll go with. I need to go to the store and pick up some Cacique Crema Mexicana.

          Do you guys think a tempura batter would work well? I want something light, but will also crisp well.

            Ooooh. Fish Tacos are the signature dish for tonight's Throwdown with Bobby Flay. I'll let you know how Bobby throws it down.

              Cesar Gonzales, tonight's throwdown opponent and owner/operator of Mama Testa in San Diego, says that Mexican restaurants should 1- Stop using yellow cheddar, 2- Stop using sour cream, and 3- Stop using yellow onions. He's native Mexican so he knows what he's talking about on this one.

                Cesar uses corn tortillas, Bobby is using flour because he likes their texture better.

                  Cesar mixes in his Salsa Fresca with the slaw. Bobby keeps it traditional citrus/vinegar based.

                    Cesar uses catfish, battered and fried. He uses APF, baking powder, dark beer and hot sauce for the batter.

                    Bobby grills Mahi-Mahi with a citrus vinaigrette basted on afterward.

                      In a coup for Flystripper, Bobby uses almost his exact same tomatillo salsa to top of his fish tacos.

                        Cesar loves it when Bobby shows up! He must have been tipped off because he didn't look surprised and had an Irish joke at the ready.

                            As usual, the judges say that the contestant's dish is the more traditional dish and that Bobby's is a fresh take.

                            And...Cesar wins! Bobby seemed a little annoyed during this one.

                              Now they have an episode with Puffy Taco's as the signature dish. Gross. It sounds like slang for an std.
