Okay, I only have one healthy Thai recipe but it's pretty good.
Thai Basil Turkey (typically made with Pork and called Pad Krapao Mu)
Pound or so of extra lean ground turkey
2 or 3 finely sliced grean onions
2 or 3 garlic cloves, diced
1 1/2 cups of Thai Basil
2 tbs oyster sauce
2 tbs fish sauce
2 tsp brown sugar
2 to 10 finely diced thai chilis or Sriracha to taste
1 egg sunny side up per dish (remove the yolk for extra healthy)
Rice, brown if you'd like
Cook your rice like normal
Spray your wok with PAM, heat to medium high. In a separate pan, start the eggs
Toss in the garlic and onions, let sizzle for about 30 seconds
Toss in the turkey until it loses it's blush, about 2 to 3 minutes
Put in the sauces, sugar and chili and toss for the next minute
Toss in the basil and remove from heat, the basil will wilt from the heat of the dish
Put the rice in a bowl, spoon some of the mixture on the rice and top with the egg. Enjoy!
