              The Costco (Kirkland) offerings of Manchego, Pecorino Romano and Parmesan cheeses, while pricey, are all excellent for that price.

                Since we were stuck with the large quantity of Kraft singles, we started trying it on some things. What we found was that when you combine one slice of Kraft singles with a piece of Tillamook Deli-Sliced Medium Yellow Cheddar, you get creamy cheesy deliciousness.

                We've now burned through all the kraft singles using them on hamburgers and grill cheese sandwiches. Our youngest is again asking for more.

                            We were making homemade pizza last night for dinner, so I stopped by the store on the way home from work to grab a block of low-moisture whole milk mozz. (Galbani is the brand our nearest grocer carries. It seems to work well enough). Well, on the low moisture front, the store was out of anything but skim milk pre-shredded. Thanks but no thanks. After poking around the deli, I found something that seemed like it would be the right level of melty without seeping whey everywhere. (fresh mozz has its place, but it’s a supplement to, not a substitute for low moisture mozz, IMO. ). The fact that it was designated for quesadillas made me think it would work for pizza.

                            it was excellent! It melted almost exactly like mozzarella, and got golden and stretchy. But I have no idea what kind of cheese it actually is. Flavor wise it was a little more nutty than mozzarella, but not nearly as nutty as parm, or cheddar.

                            what cheese is this?

                                Unfortunately I didn’t snag any. I will next time. A couple weeks ago we took our priest quorum to a friend’s house for a pizza night. They recently built a brick pizza oven. I can’t stop thinking about it. The pizza was amazing. Btw, he used dough balls from Blaze pizza. They were fantastic. And so much better than the dough is at Blaze pizza. Their mechanical way of splaying the dough really messes it up, apparently, but the dough itself is great.

                                Enjoy a picture of that backyard pizza oven in lieu of my grill-finished pizza.
