I had two elk backstraps from last winter's hunt. Coated with fresh garlic, sea salt, and evoo.

I used cherry wood with a dash of mesquite. Smoked on 225 to an internal temp of 135. A quick sear (2 minutes a side), and 15 minute rest. Here w are just prior to carving

OMG!! This was almost the best slice of meat I have ever eaten. A little more garlic and a little less salt, and it would have been #1. I now have even more motivation for shooting defenseless animals
