I slice a lemon and set the peppers on top of the slices. Keeps them out of the juices, but keeps the peppers sweet. Of course, I have no idea if this works if you prefer to use peppers picked before their prime (green).

Replace the ground beef with venison burger. Yummy.

I've done a polenta and cheese stuffed pepper before that was excellent.

No meat, but still very tasty.

If you're going to hack Triple Dad, at least go with his good material. But sauteed SDT is really good in couscous Just add pine nuts, feta and kalamata olives. Serve with some kabob chicken, a side of hummus or labneh or baba ganoush, fresh pita and heaven awaits.

You do NOT want to burn the SDT. They start to bleed if you saute them too long. Just enough heat to warm it through.

I wanted to report that the birthday dinner was a great success. I used the recipe I posted above but with the addition of some mild italian sausage from Sniders. I don't even like peppers much, and I thought they were good.

Thanks, 'bette, for the tip on the lemons. I tried it and it worked well.

            My wife thinks I'm great.

Glad it worked. Thanks for testing out the recipe. It looks good, and I'll have to make it one of these days soon.

Not my recipe, but on another forum they are having a bacon wrapped pepper throwdown. I though these looked good!

i got a few jalapenos and poblanos and stuffed them with
shredded gouda and cheddar cheese, red onion, garlic, smoked turkey breast, and morel mushroom pieces, wrapped in apple smoked bacon and smoked again with apple & cherry for 1.5 hours. yum.
