  • Recipes needed

    We haven't had a recipe thread for awhile. I love a good recipe and need a few more than can be prepared start-to-finish in 20 minutes or so but don't involve the words Hamburger Helper *cringes*. Any ideas?

    I offer up my Broiled Chicken Quesadilla recipe

    Ingredients
    Chicken:
    Enough chicken to fill up each tortilla (I use 4 chicken tenderloins for the 2 of us)
    Taco seasoning
    Lime juice
    Salt & pepper

    Sauce:
    One half Mexican sour cream, one half salsa of your choice (I like Mrs. Renfro's Habenro)

    Optional:
    Black beans
    Green chiles
    Cheese

    Burrito-size tortillas (flour works better; I've used whole wheat with success as well)

    Directions:
    1. Set broiler to 500 degrees.
    2. Cook chicken in grill pan or other pan over medium heat in taco seasoning (I use a heavy hand), lime juice, and salt and pepper to taste.
    3. When chicken is cooked, remove from pan and stuff into the tortilla. Spoon a generous amount of the sour cream/salsa sauce over the chicken, but not so much it oozes out the edges.
    4. Fill with other yummy things like cheese and black beans to your desire.
    5. Place under broiler, 2-3 minutes on each side. Watch closely or the tortilla will go from crispy to blackened in a few seconds.
    6. Remove from oven, cut into wedges with a pizza cutter and serve warm. Great with guac or sour cream on the side.

    To make this even faster, use canned chicken from Costco or Sam's Club. Just drain the can, toss it on the skillet on medium-high, stirring until it loses the pink "canned" color and shreds more, then add about a half-cup water and taco seasoning. You can also substitute bbq sauce for a different quesadilla flavor.

      Tonight we had a monster Caesar salad.

      Chicken - Marinate a few chicken breasts in light Caesar dressing for a few hours. I usually toss it in the marinade before I go to bed the night before. Grill it as normal. Thinly slice for the salad.

      Lettuce - A combo of romaine and spinach. I guess you could use iceberg, but I don't like it.

      Green Beans - Steam for about 4-5 minutes then shock in ice water. You can do this ahead of time.

      Sliced Mushrooms
      Pinch of Feta
      Pinch of fresh parmesan
      Gardini's Light Caesar Dressing
      Croutons
      Squeeze of lemon on top of salad


      This salad is one of our favorites. It's easy and cheap. Pretty healthy if you go light on the dressing and cheese. The green beans add a fun texture, as do the mushrooms. The feta compliments the dressing and less of both goes a long ways alongside the parmesan.

              Sounds really good. I'm all for making greens palatable. Do you ever use spinach in the mix as well?

                My all time favorite: Green Bean Casserole

                1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)
                1/2 cup milk
                1 tsp. soy sauce
                Dash ground black pepper
                4 cups cooked cut green beans
                1 1/3 cups French's® French Fried Onions

                Directions:

                MIX soup, milk, soy, black pepper, beans and 2/3 cup onions in 1 1/2-qt. casserole.

                BAKE at 350°F. for 25 min. or until hot.

                STIR . Sprinkle with remaining onions. Bake 5 min.


                We make it at least once a week so there's always some in the fridge. There's nothing better than a cold Green Bean Casserole on Wonder Bread sammich for lunch!
