We haven't had a recipe thread for awhile. I love a good recipe and need a few more than can be prepared start-to-finish in 20 minutes or so but don't involve the words Hamburger Helper *cringes*. Any ideas?
I offer up my Broiled Chicken Quesadilla recipe
Ingredients
Chicken:
Enough chicken to fill up each tortilla (I use 4 chicken tenderloins for the 2 of us)
Taco seasoning
Lime juice
Salt & pepper
Sauce:
One half Mexican sour cream, one half salsa of your choice (I like Mrs. Renfro's Habenro)
Optional:
Black beans
Green chiles
Cheese
Burrito-size tortillas (flour works better; I've used whole wheat with success as well)
Directions:
1. Set broiler to 500 degrees.
2. Cook chicken in grill pan or other pan over medium heat in taco seasoning (I use a heavy hand), lime juice, and salt and pepper to taste.
3. When chicken is cooked, remove from pan and stuff into the tortilla. Spoon a generous amount of the sour cream/salsa sauce over the chicken, but not so much it oozes out the edges.
4. Fill with other yummy things like cheese and black beans to your desire.
5. Place under broiler, 2-3 minutes on each side. Watch closely or the tortilla will go from crispy to blackened in a few seconds.
6. Remove from oven, cut into wedges with a pizza cutter and serve warm. Great with guac or sour cream on the side.
