  • Honey Crisp Apples and Recipes

    ...oh yeah. I have experience my first Honey Crisp and I am sold.

    Since it is apple picking and apple pie season, I would love to add some recipes to my collection of apple recipes.

    Here is one of my favorites and it is totally fat free... NOT!

    Caramel Apple Cheesecake Bars with Streusel Topping

    Ingredients
    2 cups all-purpose flour
    1/2 cup firmly packed brown sugar
    1 cup (2 sticks) butter, softened
    2 (8-ounce) packages cream cheese, softened
    1/2 cup sugar, plus 2 tablespoons, divided
    2 large eggs
    1 teaspoon vanilla extract
    3 Granny Smith apples, peeled, cored and finely chopped
    1/2 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    Streusel topping, recipe follows
    1/2 cup caramel topping
    Directions
    Preheat oven to 350 degrees F.

    In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender until mixture is crumbly. Press evenly into a 13 by 9 by 2-inch baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.

    In a large bowl, beat cream cheese with 1/2 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.

    In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. Sprinkle evenly with Streusel topping. Bake 30 minutes, or until filling is set. Drizzle with caramel topping.

    Streusel Topping:
    1 cup firmly packed brown sugar
    1 cup all-purpose flour
    1/2 cup quick cooking oats
    1/2 cup (1 stick) butter, softened
    In a small bowl, combine all ingredients.

    Yield: approximately 3 cups

    Now show me yours.

    You have just now experienced your first honeycrisp? I am sad that it took this long, but ecstatic that you have rectified this gross error.

    I have been eating a honeycrisp a day for the past three weeks. My mouth is salivating thinking about that damned crack apple.

      We just made a boatload of apple sauce. It's pretty easy.

      -Cut apples in half, we used a combo of Gala and Fuji
      -Boil for about 15 minutes until they're soft and mushy
      -Run all the apples through a Victorio strainer, saving the sauce and chucking the rest.
      -Can the sauce

      Some people like to add sugar and cinnamon, but my kids like it plain so we didn't add anything.

        They are tasty, that's for sure. Have you ever used them to bake with? I wonder how they hold up?

          Are they different on the east coast? I don't get the big deal about them.

            I bake with Granny Smiths. Honeycrisps are for eating. Go to Wegman's and get their triple creme brie. It's like butter. Spread some on a Honeycrisp slice. Heavenly.

                      From one who has experienced her first, this is what I found:

                      -crisp and firm
                      -tart, yet sweet
                      -very flavorful

                      With other apples, it seems like my founded criteria is hit and miss, whereas with a honeycrisp, it lands all three.

                        My wife bought 50 lbs of Honey Crisps from one of those direct from the farm operations in Payson, I believe. 50 lbs! And they are the size of grape fruits. Delicious.

                          Those are my exact criteria as well. I might also add juicy, since some apples don't get that right. Also, some apples can be crisp but at the same time too dense. Honey crisps are much lighter, yet remain firm. Almost difficult to describe how perfect they are!

                              Yeah, I admit I was a little annoyed when I came home and found that out. But as it turns out, it hasn't been a problem. And they keep really well in the fridge.
