    Good idea. Beans are on at 350, smoking with apple. I'll grab some bacon.

    On that note, apple has turned into my go to wood. Seems like it works well for everything, and our Wal-Mart sells chunks.

      I am going to have to try this out. How often did you check on this and stir? Was there any generation of DDD's disgusting crust?

        I try to stir every 15-20 minutes. That way you get a good even distribution of the smoke flavor.

            I was searching for some different baked bean recipes to try, and I saw one that was frequently mentioned on several BBQ/smoking-related boards. It's the Keri C. bean recipe. Have any of you tried it before? I think the original post/thread is this one:

            Keri's Hog-Apple Baked Beans 3 or 4 slices bacon, diced 2 (16 oz) cans pork and beans, mostly drained (modified to 2 28-oz cans Bush's Baked Beans - see note below) 1/2 c. Blues Hog BBQ Sauce (or other sweet-spicy favorite) 1 lb. smoked leftover smoked pork or beef, more or less, or 1 lb...


            I had some leftover brisket the other day, so I followed the recipe as she originally posted with the following exceptions. I don't have any Blues Hog sauce or rub, so I used what I had on hand. Also, I broke the apple slices into smaller chunks. (EDIT: I also used three 15-oz. cans of beans.)

            They didn't become my new number one recipe, but they're very good. The savory, spicy, smoky and sweet flavors are all easy to pick up, and I enjoyed the apple pieces in the beans a lot more than I expected. If I make them again, I'll make them one day before serving and let the flavors come together in the refrigerator for a day before reheating to serve. It was really good right out of the oven, but it was even better after the flavors had a day to come together.

                  Yes, there is a lot of sweetness there between the pie filling and brown sugar (not to mention what is already in the canned beans and the BBQ sauce). One benefit to that, I thought, was that the sweetness balanced the heat of the cayenne pepper and the rub to where people who don't like heat might be fine with it here.

                      I wonder if you could use just fresh apples instead of the pie filling for the same effect without overdoing the sweetness. Also, that Blues Hog sauce is mega-sweet. I can't eat that stuff straight.

                          I don't see why not. And you are correct about the Blues Hog. Most people mix the original with the red to cut the sweetness.

                              A couple of people in that Virtual Weber Bullet thread did just that, and they said it turned out well. One guy said he cooked the fresh apples down a bit with the onion and green pepper.

                              I failed to mention one other change I made to the recipe. I used three (15 oz.?) cans of beans instead of two. I can't imagine having a lower ratio of beans to other ingredients than I did. The current version of the recipe as posted there uses 56 oz. of beans.
