    I neglected and sort of forgot about the carrots I planted in the garden in spring. I thought they would be worthless now but I pulled one up yesterday and it was delicious. I had a dill pickled carrot at some restaurant as a kid. I remember it being excellent. I wonder if this recipe would work for carrots. Maybe if I'm not too lazy this weekend I'll try it.

      Yes, but carrots might need to be processed for longer than pickles. I'd check with your state's land grant university for recommendations from their "extension" program based on local conditions (e.g. elevation).

          An update:

          Tried the recipe a few weeks ago and it's a hit, though I did dial down the garlic a bit, as my family really doesn't appreciate garlic as much as I do.

              Made these a couple of months ago with pickling cucumbers from our garden. We did 7 quarts.

              Just cracked open the first quart today - delicious.

                    I'm interested in trying the pickles.
                    We just finished up with about 60 quarts of peaches (plus several pounds in the freezer for smoothies) as well as tomatoes from the garden. Here's the last of the peaches and the first of the tomatoes.

                                Ever tried fried pickles? We were at Cheeseburger in Paradise (Jimmy Buffet's chain) a while back for lunch and were told we had to try them. So we figured what the hell. They were good and Gabers has made a few different versions now. Some with just egg and flour, another with a cold batter (which I think is better). Coming soon, doing some with breading rather than batter. The correct thickness of the slice is pretty key.
