    It's grilling season again. On the menu this week:

    kabobs
    grilled chicken
    burgers (we grind our own beef, it is the only way to fly)

    Alert your friends and families.

    Grilling season never ends! I think it's fun to grill in the middle of snow storms.

      I'd like to try grinding my own meat for burgers. What cut do you recommend and how do you prepare it?

            To be honest you don't even need a meat grinder. I have made hamburger in a food processor. Cube steak into 1" chunks. Place the cubes on a cookie sheet and freeze it for about 20-30 minutes so they harden up some but are still pliable. Use a mix of sirloin (flank even works well) and short rib meat. If you want a pound of hamburger I'd do 10 oz. of the sirloin and then 6 oz. of the short rib meat. If you need more hamburger keep the same ratio. Place it in small batches into the food processor. For a pound of hamburger I'd probably only process half of it at a time. Just pulse for about 1 second. It will take about 10-15 of these 1 second pulses to ground the beef. Just eyeball it until it has the consistency you want. You don't want to overdo it. Also when forming them, don't mash them into balls then flat them out. Try to form them without compressing them, but enough to hold together while cooking. To be honest these are probably better on a skillet than a grill. Season with salt and pepper and you're good to go.

                We use sirloin, even a rump roast once. Cut into cubes like Surfah said. Pulse in the food processor taking care not to chop it up too thin.

                We season with salt, pepper, and Worchestershire sauce.

                I find that making your own hamburger really helps the flavor stand out. Plus I know within reason where the beef came from. Who knows what's in the the old patties you can buy pre-made at the store, or even the "fresh" ground they have.

                  When my Dad was cutting meat for a living, most of the hamburger they sold came from trimmings and cuts that would not sell, like the brisket. Granted, this was a while ago - occasionally they would bring in an old bull and put the whole thing into hamburger.

                        Grilled up some chicken on Monday, marinating it in oil, water, salt, pepper, and this washing park mixture. Wifey made some tzatziki (Ina Garten's). Threw them on a grilled pita bread with some tomatoes, cucumbers, red onions, lettuce, and feta. Perfection.
