Cream of mushroom soup in recipes has become the very definition of middle American bad taste and culinary mediocrity, a veritable social ill. But I think there's a case to be made that in a pinch it's a credible ready made roux. What is roux anyway but butter, flower and broth or milk? Where do you come down on this thorny culinary issue?

It reminds me of Bobcay GOldthwaite's line about things like snake that taste just like chicken. If they taste just like chicken then why don't you just eat chicken?

I'll admit that I have one recipe where I use Cream of Mushroom soup. It's one of my childhood favorites and always brings back some good memories whenever I make it.
You get a few pork chops, season with salt and pepper. Toss them on a skillet with a bit of OO and fry 'em up. When they're done, remove the pork chops from the skillet and throw in a can or two of COM (You can also saute' sliced mushrooms prior to adding the COM for a chunkier gravy). Stir and thin with milk until you get a good gravy consistency and you've integrated the browned bits from the pork chop. Add the chops in back the sauce and simmer for a few minutes. Serve over rice with green beans on the side.
It's not gourmet cooking by any stretch. Most people would think it's gross. But with food, sometimes it's those old favorites that are most comforting.

I agree I love the old staple of throwing a few pieces of chicken in the crock pot with a can of cream of chicken and a some cream cheese. Let it cook all day and serve with rice. I try to avoid the stuff as much as possible because all my kids refuse to eat it, but beef stroganoff almost demands it. That is one of all-time favorite comfort foods for my wife and me.Originally posted by YOhio View Post

Last week I made some stroganoff with ground turkey and put it over some about-to-expire whole wheat egg noodles (it was clean out the pantry week). Yum! It was dinner last Monday and lunch 2 days this week.
Then again, perhaps my liberal application of hot sauce masked the COM soup...
Roux is great, but COM is convenient.
