Thanksgiving is for Pie

      We're having a small crowd this year. I usually make waaaaaaaaaaaay too many pies. This is the first year that I am not planning on making this pie:

      This year I am trying out a pumpkin streusel pie because I really like cookie crusts better than pastry crusts.

      I am also making a coconut cream pie and am thinking of making the pudding with coconut milk instead of whole milk. (I make the pudding from scratch, no powder or box puddings for me.) I don't know if it'll set up enough.

      Someone a long time back posted a recipe for a cranberry pie and I am tempted to make that as well, but we're only going to be having 4 adults and 6 kids (that includes us) and I really don't want that much leftover pie hanging around my thighs our house.
      What's to explain? It's a bunch of people, most of whom you've never met, who are just as likely to be homicidal maniacs as they are to be normal everyday people, with whom you share the minutiae of your everyday life. It's totally normal, and everyone would understand.

        I have NEVER used canned whipped cream. I always whip my own. Those cans belong to UD's aunt.

          I use canned whip cream all the time...just never on pie.

              One of my wifes favorites

              Grandma Hill's Stawberry/Rhubarb Pie

              Filling
              3 tbl fresh lemon juice
              1/2 tsp cinnamon
              pinch cloves
              2 c rhubarb cut up
              2 c strawberries sliced
              1 c sugar
              1 tsp powdered sugar

              single pie crust

              Preparation

              stir dry ingredients together, add lemon juice and fruits. Toss to mix. Let stand at room temp for 15 min, stirring occasionally, until fruits release some juice and sugar is almost completely dissolved.

              Preheat oven to 450 degrees

              spoon filling into curst and fold dough around edge over filling
              bake in 450 degree oven for 10 minutes then reduce heat to 350 and bake 35-40 minutes longer - until crust is golden brown.
              place on a wire rack to cool, spoon preserves over filling
              Sprinke powdered sugar over pie

                  Chillin at my sister's house all day, I busted out a kick-Ass blackberry pie!

                      I apologize that this is late, but this is my Mom's lemon meringue pie recipe (as written by her in step by step directions):

                      Combine in sauce pan and cook:

                      1 1/3 cup sugar
                      1 cup water
                      2 Tbsp margerine

                      mix then add to sauce pan and cook:

                      1/3 cup cornstarch
                      1/2 cup cold water

                      Beat, then add to sauce pan and cook:

                      4 egg yolks
                      3 Tbsp. milk

                      Add and cook:

                      1/2 cup reconstituted lemon juice

                      Pour into baked pie crust and add meringue.

                      Meringue recipe:

                      Beat till stiff 4 egg whites

                      add:

                      6 Tbsp. sugar
                      1 tsp. lemon juice

                      Spread on pie. Brown 5-10 minutes in 350° oven.

                              This is my mom's lemon meringue pie recipe

                              It is slightly different that IPUs and makes a fairly tart pie - It was my favorite pie, when I could have pie

                              Filling

                              1 c sugar
                              1/4 c corn starch
                              1 1/4 c cold water
                              3 egg yolks
                              1/2 c fresh squeezed lemon juice - not reconstituted
                              zest of 1 1/2 lemons
                              1 tbls butter, margarine can be substituted if you have to ( the line was actually on the recipe card we got from Mom )

                              meringue

                              3 egg whites
                              1/3 c sugar
                              pinch of Cream of Tarter

                              1 baked 9 inch pie crust

                              preparation

                              filling

                              in a medium sauce pan combine sugar and cornstarch, when well mixed add water and stir until smooth, add egg yolks and stir until well combined
                              stirring constantly bring to a boil over medium heat, boil for 1 minute remove from the heat stir in lemon zest, lemon juice and butter and stir until well blended
                              Poor hot filling into pie crust

                              Meringue

                              beat egg whites at high speed until foamy, gradually beat in 1/3 c sugar and CoT; continue beating until meringue forms stiff peaks
                              spread meringue evenly over the HOT pie filling (don't let it cool)

                              bake 15-20 minutes or until golden brown, cool on a wire rack

                              Mrs HO is making this right now for tomarrow

                              Side note, when making her pie crusts Mrs HO substitutes 1 tbls of vodka for water. This does make a really flakey pie crust
