    Nina's Lemon Cream Pie

    1 c. sugar
    1/4 c. plus 1 T. cornstarch
    1/4 c. butter
    good T lemon zest
    good 1/3 c. fresh lemon juice
    3 eggs, beaten
    1 c. whole milk
    1 c. sour cream
    9" baked pie shell
    whipping cream

    Mix sugar and cornstarch. Add remaining ingredients and cook until think and bubbly, stirring constantly with a whisk. Take off heat and cool completely in fridge. Stir often or cover surface with saran so a film doesn't form. Fold in 1 c. sour cream. Put into a baked, cooled pie shell. Top with whipped cream. Yum-o!

    Super's Crumb-Topped Apple Pie

    Filling:
    6-8 thinly sliced, peeled Granny Smith apples
    1 lemon
    3/4 - 1 c. sugar
    1/4 - 1/2 c. brown sugar
    3 T. flour
    1 t. ground cinnamon
    1/2 t. allspice
    1/4 t. nutmeg

    1 unbaked pie shell

    Crumb Topping:

    1 c. packed brown sugar
    1 c. all-purpose flour
    1/2 c. quick cooking oats
    1/2 c. butter, sofened

    Prepare pie shell in pie pan. Preheat oven to 375. In a large mixing bowl add all ingredients for filling and toss to coat. Place in pie shell.

    With a pastry cutter, combine all ingredients for crumb topping. Spoon over apples.

    Cover the edges of pie with foil or crust shield and bake at 375 for 25 minutes. Remove foil/crust shield and bake for another 30-35 minutes.

    Pie is ready when filling is bubbly and the top is a dark golden brown. Cool on wire rack and serve warm.

              You also need to keep in mind that it is mostly guys here. It is our function to eat pie. Also to preside over the making and eating of pie. That doesn't necessarily mean any of us know how to actually make a pie.

                This thread is funny. I have typed and then deleted at least 4 comments, and I've decided I'm going to leave it at that.

                              I have not made this pie, but I have been meaning to ever since I saw it featured on an episode of Throwdown with Bobby Flay.

                              The actual recipe has not been made public, but I've been meaning to make an attempt to adapt my mom's apple pie recipe to try it out. Apparently it has two different crusts: a lard-based bottom crust, and a sugar-cookie type top layer. Also, I remember something about adding tapioca flour to the apples to get the right consistency of the filling. I'll have to re-watch the episode when I finally get around to doing it.
