Time to get serious about a new smoker.

  • Okay, I think a Yoder is in my near future.
    One of the grandest benefits of the enlightenment was the realization that our moral sense must be based on the welfare of living individuals, not on their immortal souls. Honest and passionate folks can strongly disagree regarding spiritual matters, so it's imperative that we not allow such considerations to infringe on the real happiness of real people.

        Actually, I bit the bullet on a pellet smoker last year as well, but only after my Acorn bit the dust. I still feel like it's an outdoor oven, but it's just oh so easy. And some dang good food.
        At least the Big Ten went after a big-time addition in Nebraska; the Pac-10 wanted a game so badly, it added Utah

              How does an Akorn bite the dust, if you don't mind sharing? One of the pros of kamados for me is that a hinge and a daisy wheel are the most complex parts.

                Well, of course nobody in our house did it, so it remains one of those supernatural mysteries, but it spontaneously tipped over while open, and the bottom became a different shape than the top.

                I'm with you on the working parts aspect. There's something primal about cooking with just fire that is completely missing now. Oh, and a GFI tripping is a completely lame excuse for not having food ready.

                  • Maiden voyage was a hit. Pork butt and DT beans. Both Delish. 7 pound butt took 20 hours. Pellet usage was a bit more than expected, but it was a long cook.

                      That is a crazy long cook. I've never had a butt go longer than 14 hours.

                      I'm doing brisket today on my Yoder. Woke up at 3:30am and had it started and the meat on and was back in bed by 3:45.

                      • My local Costco had pork loin on special the other day. Cut one in half and smoked it at 225 for about 2.5 hours before it hit the desired internal temperature of 145. Conveniently, a slice of the loin is pretty much a perfect match for a hamburger bun.

                          I have never had one go more than 14 hrs. 9-10 is more typical.

                          • Did brisket today and it turned out phenomenal. I watched the Aaron Franklin videos enough that I feel like I know them by heart. I guess it's paying off. I've really become a fan of the basic salt/pepper rub on top of a prime brisket from Costco. There really isn't anything better. Although I'll admit to using hickory instead of oak. I need to get some oak pellets, but I love the hickory as it's not strong but still smoky, pretty much like oak. Oh, and I had an incredible smoke ring today as well. Too bad I was too busy eating and serving to take pics
