I'm gonna take a while guess and say:

The metal peel allows you to slide right between the pizza and stone effortlessly.

So - I admit I was having a little fun with my earlier response.

That aside, my friend picked up a pizza oven top for his Camp Chef a couple of years ago. It has a pizza stone bottom with a steel hood to keep the heat in and cook the pizza. It also came with one of those large wooden pizza paddles to get the pizza in and out.

We got the pizza in just fine with the paddle, but it was a holy mess trying to get the thing back out again. This was on a camping trip, so we just had what utensils we'd taken along to use. Ultimately we ended up using a regular spatula and doing a lot of extra work to get the pizzas out. I'm thinking a metal pizza paddle would've been really slick in that situation.

The metal peel allows you to slide right between the pizza and stone effortlessly.
Genius. Wood to slide it on and metal to take it off.

That sounds a lot easier than what I've been trying to do.

Well, I just purchased a Pit Barrel Cooker. We'll see how it plays out, but I'm extremely excited to do my first brisket. I already volunteered to smoke something for 7/4, I want to do my first brisket. Anyway, I'm pretty sure I just volunteered myself to cook for every single family gathering from here on out. I'm ok with that (I also got the turkey hanger, so I'm good to reprise my smoked turkey success of the year before last). I was originally looking for a Traeger as they were highly recommended from here, but came across this one, and I have to say that cooking over charcoal/wood appeals to me a lot more than a pellet smoker. That's probably just the KC BBQ snob in me, though...

I'll post pics when I get it and when I start cooking with it.

I bought one of these a few years ago and love it. It's a great option for camping/picnics/anytime you want to cook away from home. It's also what I recommend to anyone who wants to dip their toes in--relatively cheap, easy to learn, and if you get more serious later, you have a great portable smoker that you'll still have a use for later.

Thanks, I hope I end up loving this as well. Also, this is me getting serious(er). Now that the kids are out of the house, basically, I have time to focus in other areas, maybe some local BBQ competitions... nah, that's crazy talk... sorta... Anyway, the idea is tossing around my head, but for now it's for having friends and family over for some good BBQ.

I think I'm in the market for a new smoker. I love my WSM but my last brisket I did I had to fold the end of it. I've been looking at larger smokers and I can't find anything that will likely keep the steady heat of a bullet smoker. This has led me to consider maybe getting a pellet smoker (GASP!)

I would love to get a smoker with an offset firebox and then burn only wood, but I know from experience and from the experience of others that the temp of those things can be tough to hold steady. Right now I can set my WSM adn then sleep through the night without having to tend it for at least 10 hours, and oftentimes I can get 14-16 hours out of it. But, I want to be able to do 4-6 briskets or pork butts if needed and I don't want to have to fold my briskets.

So, is a Traeger the only decent option? Let's say that price isn't really an issue (I'm willing to go about $1k) but I'm not about to spend Lebowski money on some mega 500lb smoker. It sounds like the Traegers tend to have some issues, but maybe those are just highlighted here while others have no issues at all.

You'd need a bigger Traeger than mine to handle 4-6 pork butts or briskets.

I heard there may be a BBQ trailer for sale in Wyoming.

I'm in a similar boat. I was planning on coverting a 250 gal. propane tank to a smoker, but my brother (who has all the tools) has been wishy washy on the project. I wouldn't get an offset stick burner unless it was reverse flow, and those start to cost some decent coin.

Maybe I should clarify. I'd like to do 4 briskest or 6 butts at a time. That's not huge but it would require a decent size smoker.

                                Four briskets!?

I like the cut of your jib, but none of the more typical pellet smokers would be able to handle that. Also, you could do two butts per brisket so something big enough for 4 briskets would do 8 butts. (btw, with 8 butts you could feed 100-120 people).

The only pellet smoker that would do that quantity would be one of the big vertical smokers like the one DT owns. In fact, I would be shocked if you could find a smoker of any kind that would handle that capacity but also have set-it-and-forget-it capability for under $1K. Unless you start watching Craig's List religiously and find a steal.

                                Good luck!
